For the Cake:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder

- 1 cup crushed pineapple, drained (reserve juice)
- 1/4 cup pineapple juice (from the crushed pineapple)
For the Frosting:
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese, softened
For Garnish (Optional):
- Fresh pineapple slices
- Toasted coconut flakes
- Maraschino cherries
Instructions
Step 1: Prepare the Cake Batter
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the reserved pineapple juice. Mix until just combined.
- Gently fold in the crushed pineapple until evenly distributed.
Step 2: Bake the Cake
- Pour the batter into the prepared cake pan and smooth the top.
- Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Step 3: Prepare the Frosting
- In a mixing bowl, beat the softened cream cheese until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until combined.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
Step 4: Assemble the Cake
- Once the cake is completely cool, spread the cream cheese frosting evenly over the top and sides of the cake.
- Decorate with fresh pineapple slices, toasted coconut flakes, and maraschino cherries if desired.
Step 5: Serve
