For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup crushed pineapple, drained (reserve juice)
  • 1/4 cup pineapple juice (from the crushed pineapple)

For the Frosting:

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened

For Garnish (Optional):

  • Fresh pineapple slices
  • Toasted coconut flakes
  • Maraschino cherries

 


Instructions

Step 1: Prepare the Cake Batter

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the reserved pineapple juice. Mix until just combined.
  6. Gently fold in the crushed pineapple until evenly distributed.

Step 2: Bake the Cake

  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 3: Prepare the Frosting

  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Gradually add the powdered sugar and vanilla extract, mixing until combined.
  3. In another bowl, whip the heavy cream until soft peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.

Step 4: Assemble the Cake

  1. Once the cake is completely cool, spread the cream cheese frosting evenly over the top and sides of the cake.
  2. Decorate with fresh pineapple slices, toasted coconut flakes, and maraschino cherries if desired.

Step 5: Serve

  1. Slice the cake and serve chilled or at room temperature. Enjoy the tropical flavors!
