Instructions
Step 1: Prepare the Ingredients
- If you haven’t already, cook and shred or dice the chicken. You can use rotisserie chicken for convenience.
Step 2: Mix the Salad
- In a large mixing bowl, combine the cooked chicken, softened cream cheese, mayonnaise, shredded cheddar cheese, chopped jalapeños, sliced green onions, garlic powder, onion powder, salt, and pepper.
- Stir until all ingredients are well combined and the mixture is creamy.
Step 3: Serve
- Taste the chicken salad and adjust seasoning as needed, adding more jalapeños for extra heat if desired.
- For best flavor, refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
- Serve the chicken salad in lettuce leaves or on its own as a delicious low-carb meal.
