  • Author: I
  • Total Time: 1 hour 15 minutes

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1/3 cup melted coconut oil (or unsalted butter)
  • 1/2 cup honey (or maple syrup)
  • 1 teaspoon vanilla extract
  • 1 large egg, beaten
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 teaspoon ground cinnamon (optional)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

Step 1: Preheat the Oven

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

Step 2: Mix Wet Ingredients

  1. Combine Bananas and Oil: In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted coconut oil.
  2. Add Honey and Vanilla: Mix in the honey and vanilla extract until well combined.
  3. Add Egg: Beat in the egg until fully incorporated.

Step 3: Mix Dry Ingredients

  1. Combine Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, ground cinnamon (if using), and all-purpose flour.
  2. Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  3. Fold in Add-ins: If using, gently fold in the chopped nuts and chocolate chips.

Step 4: Bake

  1. Pour Batter: Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Step 5: Cool and Serve

  1. Cool: Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  2. Slice and Enjoy: Slice the bread and enjoy it plain or with a spread of butter or nut butter.
