- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 cup apple cider
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
- 1 tablespoon butter (optional, for richness)
Instructions
Step 1: Prepare the Pork Chops
- Season the Chops: Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.
- Heat Olive Oil: In a large skillet over medium-high heat, add the olive oil. Once hot, add the pork chops and sear for about 4-5 minutes on each side until they are golden brown. Remove the chops from the skillet and set aside.
Step 2: Sauté the Onions and Garlic
- Cook Onions: In the same skillet, add the sliced onion and cook for about 3-4 minutes until softened.
- Add Garlic: Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
Step 3: Make the Apple Cider Glaze
- Add Cider and Seasonings: Pour in the apple cider, Dijon mustard, apple cider vinegar, thyme, and rosemary. Stir to combine and bring to a simmer.
- Return Pork Chops: Return the seared pork chops to the skillet, spooning some of the glaze over the top.
Step 4: Simmer and Finish Cooking
- Cover and Cook: Reduce the heat to low, cover the skillet, and let the pork chops simmer in the glaze for about 10-15 minutes, or until they reach an internal temperature of 145°F (63°C).
- Optional Butter Finish: If desired, stir in a tablespoon of butter at the end for added richness and shine in the glaze.
Step 5: Serve
- Plate and Drizzle: Serve the pork chops on plates, spooning the apple cider glaze and onions over the top.
- Enjoy: Pair with your favorite sides, such as mashed potatoes or green beans.
