Instructions

Step 1: Preheat the Oven

 

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

 

 

Step 2: Mix Dry Ingredients

 

  1. Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

 

 

Step 3: Mix Wet Ingredients

 

  1. Combine Wet Ingredients: In a large mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), melted coconut oil (or butter), eggs, lemon zest, lemon juice, and vanilla extract until smooth and well combined.

  1. Mix Together: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
