- 1 ripe avocado, mashed
- 1/4 cup Greek yogurt (or mayonnaise)

- 1/4 cup red onion, finely chopped
- 1/4 cup bell pepper, diced (any color)
- Salt and pepper, to taste
- Fresh cilantro or parsley, chopped (for garnish, optional)
- Lettuce leaves or whole grain wraps (for serving)
Instructions
Step 1: Prepare the Chicken Salad
- Mix Ingredients: In a large bowl, combine the shredded chicken, mashed avocado, Greek yogurt, Dijon mustard, and lemon juice. Mix until well combined.
- Add Vegetables: Stir in the chopped celery, red onion, and bell pepper. Season with salt and pepper to taste.
Step 2: Serve
- Garnish: If desired, garnish with fresh cilantro or parsley.
