Healthy Avocado Chicken Salad Recipe

Ingredients

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works well)
  • 1 ripe avocado, mashed
  • 1/4 cup Greek yogurt (or mayonnaise)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup bell pepper, diced (any color)
  • Salt and pepper, to taste
  • Fresh cilantro or parsley, chopped (for garnish, optional)
  • Lettuce leaves or whole grain wraps (for serving)

 


Instructions

Step 1: Prepare the Chicken Salad

  1. Mix Ingredients: In a large bowl, combine the shredded chicken, mashed avocado, Greek yogurt, Dijon mustard, and lemon juice. Mix until well combined.
  2. Add Vegetables: Stir in the chopped celery, red onion, and bell pepper. Season with salt and pepper to taste.

Step 2: Serve

  1. Garnish: If desired, garnish with fresh cilantro or parsley.
  2. Enjoy: Serve the avocado chicken salad on a bed of lettuce, in whole grain wraps, or on its own as a light meal.
