- 1 lb ground turkey
- 1 cup rice (white or brown)
- 2 medium zucchinis (sliced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 2 cups chicken broth (or water)
- 1 teaspoon Italian seasoning
- Salt and pepper (to taste)
- 2 tablespoons olive oil
- Fresh parsley (for garnish, optional)
Instructions
Step 1: Sauté the Turkey
- Heat the olive oil in a large skillet over medium heat.
- Add the ground turkey to the skillet. Season with salt, pepper, and Italian seasoning. Cook until browned, breaking it apart with a spoon, about 5–7 minutes.
Step 2: Add Vegetables
- Stir in the chopped onion and minced garlic. Sauté for about 2–3 minutes until the onion is translucent.
- Add the sliced zucchini to the skillet and cook for another 3–4 minutes until slightly softened.
Step 3: Cook the Rice
- Stir in the rice and pour in the chicken broth. Bring to a boil.
- Reduce the heat to low, cover, and simmer for about 15 minutes (or according to rice package instructions) until the rice is cooked and has absorbed the liquid.
Step 4: Serve
- Once the rice is cooked, fluff it with a fork. Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley if desired.
