Ground Turkey Skillet with Zucchini & Rice Recipe

Ingredients

  • 1 lb ground turkey
  • 1 cup rice (white or brown)
  • 2 medium zucchinis (sliced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 2 cups chicken broth (or water)
  • 1 teaspoon Italian seasoning
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil
  • Fresh parsley (for garnish, optional)

 


Instructions

Step 1: Sauté the Turkey

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the ground turkey to the skillet. Season with salt, pepper, and Italian seasoning. Cook until browned, breaking it apart with a spoon, about 5–7 minutes.

Step 2: Add Vegetables

  1. Stir in the chopped onion and minced garlic. Sauté for about 2–3 minutes until the onion is translucent.
  2. Add the sliced zucchini to the skillet and cook for another 3–4 minutes until slightly softened.

Step 3: Cook the Rice

  1. Stir in the rice and pour in the chicken broth. Bring to a boil.
  2. Reduce the heat to low, cover, and simmer for about 15 minutes (or according to rice package instructions) until the rice is cooked and has absorbed the liquid.

Step 4: Serve

  1. Once the rice is cooked, fluff it with a fork. Taste and adjust seasoning if necessary.
  2. Serve hot, garnished with fresh parsley if desired.
