Grilled Berry Feta Chicken Salad Recipe

Ingredients

For the Salad:
• 2 boneless, skinless chicken breasts
• 1 tablespoon olive oil
• Salt and pepper, to taste
• 4 cups mixed salad greens
• 1 cup mixed berries (strawberries, blueberries, raspberries, or blackberries)
• 1/2 cup crumbled feta cheese
• 1/4 cup sliced almonds (or walnuts)

For the Dressing:
• 1/4 cup balsamic vinegar
• 2 tablespoons olive oil
• 1 tablespoon honey (or maple syrup)
• 1 teaspoon Dijon mustard
• Salt and pepper, to taste


Instructions

Step 1: Prepare the Chicken
1. Preheat your grill or grill pan over medium-high heat.
2. Brush the chicken breasts with olive oil and season with salt and pepper.
3. Grill the chicken for about 6–7 minutes on each side or until fully cooked. Let it rest, then slice.

Step 2: Make the Dressing
1. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper.

Step 3: Assemble the Salad
1. Layer the mixed salad greens in a large bowl or platter.
2. Add the sliced grilled chicken, mixed berries, crumbled feta, and sliced almonds.

Step 4: Drizzle and Serve
1. Drizzle the dressing over the salad just before serving and toss gently.
2. Serve immediately.
