Greek Yogurt Chicken Salad (No Mayo) Recipe

Ingredients

  • 2 cups cooked chicken (shredded or diced, rotisserie chicken works well)
  • 1 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper (to taste)
  • 1/2 cup celery (diced)
  • 1/2 cup red grapes (halved, or diced apples for a crunch)
  • 1/4 cup walnuts (chopped, or almonds for variation)
  • 1/4 cup fresh parsley (chopped, optional)

 


Instructions

Step 1: Prepare the Dressing

  1. Mix Ingredients: In a large bowl, combine the Greek yogurt, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. Stir until well blended.

Step 2: Combine the Salad

  1. Add Chicken: Add the cooked chicken to the bowl and mix until the chicken is well coated with the yogurt dressing.
  2. Incorporate Vegetables and Fruits: Stir in the diced celery, halved grapes (or apples), chopped walnuts (or almonds), and fresh parsley (if using). Mix until all ingredients are evenly distributed.

Step 3: Serve

  1. Chill (Optional): For best flavor, refrigerate the chicken salad for at least 30 minutes before serving to allow the flavors to meld.
  2. Enjoy: Serve on its own, over a bed of greens, in a wrap, or on whole-grain bread.
