- 1/2 cup celery (diced)
- 1/2 cup red grapes (halved, or diced apples for a crunch)
- 1/4 cup walnuts (chopped, or almonds for variation)
- 1/4 cup fresh parsley (chopped, optional)
Instructions
Step 1: Prepare the Dressing
- Mix Ingredients: In a large bowl, combine the Greek yogurt, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. Stir until well blended.
Step 2: Combine the Salad
- Add Chicken: Add the cooked chicken to the bowl and mix until the chicken is well coated with the yogurt dressing.
- Incorporate Vegetables and Fruits: Stir in the diced celery, halved grapes (or apples), chopped walnuts (or almonds), and fresh parsley (if using). Mix until all ingredients are evenly distributed.
Step 3: Serve
- Chill (Optional): For best flavor, refrigerate the chicken salad for at least 30 minutes before serving to allow the flavors to meld.
