For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter (cold and cubed)
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 2–3 tablespoons cold water
For the Filling:
- 2 cups ricotta cheese (or a mix of ricotta and feta)
- 1/2 cup honey (plus extra for drizzling)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 1 teaspoon cinnamon (optional)
- Pinch of salt
Instructions
Step 1: Prepare the Crust
- Make the Dough: In a mixing bowl, combine the flour, cold cubed butter, powdered sugar, and salt. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Add Egg and Water: Add the egg yolk and 2 tablespoons of cold water. Mix until the dough comes together. If needed, add an additional tablespoon of water.
- Chill the Dough: Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Step 2: Prepare the Filling
- Mix Filling Ingredients: In a large bowl, combine the ricotta cheese, honey, eggs, vanilla extract, lemon zest, cinnamon (if using), and a pinch of salt. Mix until smooth and well combined.
Step 3: Assemble the Pie
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Roll Out the Dough: On a floured surface, roll out the chilled dough to fit a 9-inch pie pan. Place the dough in the pan and trim any excess.
- Add Filling: Pour the cheese and honey filling into the prepared crust, spreading it evenly.
Step 4: Bake the Pie
- Bake: Bake in the preheated oven for 30–35 minutes, or until the filling is set and the top is lightly golden.
- Cool: Remove from the oven and allow to cool for a few minutes before slicing.
Step 5: Serve
- Drizzle with Honey: Before serving, drizzle additional honey over the top for extra sweetness.
- Enjoy: Serve warm or at room temperature.
