• 4 slices of bread (sourdough, whole grain, or your choice)
• 4 ounces goat cheese, softened
• 2 tablespoons honey (plus extra for drizzling)
• 1 tablespoon unsalted butter (for grilling)
• Fresh arugula or spinach (optional, for added freshness)
• Salt and pepper (to taste)
Instructions
Step 1: Prepare the Filling
• In a small bowl, combine the softened goat cheese and honey. Mix until smooth and well combined. Season with salt and pepper to taste.
Step 2: Assemble the Sandwich
• Spread the goat cheese and honey mixture evenly on two slices of bread.
• If using, add a layer of fresh arugula or spinach on top of the goat cheese mixture.
• Place the remaining slices of bread on top to form sandwiches.
Step 3: Grill the Sandwiches
• In a skillet over medium heat, melt the butter.
• Once the butter is melted and bubbling, add the sandwiches to the skillet. Cook for about 3–4 minutes on each side, or until the bread is golden brown and crispy, and the cheese is melted.
Step 4: Serve
• Remove the sandwiches from the skillet and let them cool for a minute. Slice in half and drizzle with additional honey if desired.
