Ingredients
• 4 salmon fillets (about 6 ounces each)
• 1/2 cup grated Parmesan cheese
• 1/2 cup breadcrumbs (panko or regular)
• 2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)
• 3 cloves garlic, minced
• 1 teaspoon lemon zest
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 2 tablespoons olive oil
• 1 tablespoon Dijon mustard (optional)
• Lemon wedges, for serving
Instructions
Step 1: Prepare the Oven
1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Step 2: Prepare the Salmon
1. Season Salmon: Place the salmon fillets on the prepared baking sheet, skin-side down. If desired, spread a thin layer of Dijon mustard on each fillet for added flavor.
2. Mix Topping: In a medium bowl, combine the grated Parmesan cheese, breadcrumbs, minced garlic, parsley, lemon zest, salt, pepper, and olive oil. Mix until well combined and crumbly.
Step 3: Assemble the Dish
1. Top Salmon: Generously spoon the garlic Parmesan mixture over each salmon fillet, pressing it down gently to adhere.
2. Drizzle with Olive Oil: Drizzle a little extra olive oil over the crusted salmon for added moisture and flavor.
Step 4: Bake the Salmon
1. Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork and the crust is golden brown. The internal temperature should reach 145°F (63°C).
Step 5: Serve
1. Plate and Garnish: Remove the salmon from the oven and let it rest for a couple of minutes. Serve with lemon wedges for squeezing over the top.
