- 1 lb ground chicken
- 1/2 cup breadcrumbs (preferably whole wheat)
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 1/4 cup fresh parsley (chopped)
- 1/4 cup onion (finely chopped)
- 1 large egg
- 1 teaspoon Italian seasoning
- Salt and pepper (to taste)
- 1/4 cup marinara sauce (for topping, optional)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C).
Step 2: Prepare the Meatloaf Mixture
- In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, chopped onion, egg, Italian seasoning, salt, and pepper. Mix until just combined; avoid overmixing to keep the meatloaves tender.
Step 3: Form the Meatloaves
- Divide the mixture into 4 equal portions and shape each portion into a mini loaf. Place them on a lined baking sheet or in a greased loaf pan.
Step 4: Bake
- If using, spoon a little marinara sauce on top of each meatloaf for added flavor and moisture.
- Place the meatloaves in the preheated oven and bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaves are cooked through.
Step 5: Serve
- Once cooked, remove the meatloaves from the oven and let them rest for about 5 minutes before serving.
- Serve warm with your favorite sides, such as roasted vegetables or a fresh salad.
