Garlic Parmesan Chicken Meatloaves Recipe

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs (preferably whole wheat)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup onion (finely chopped)
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper (to taste)
  • 1/4 cup marinara sauce (for topping, optional)

 


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 375°F (190°C).

Step 2: Prepare the Meatloaf Mixture

  1. In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, chopped onion, egg, Italian seasoning, salt, and pepper. Mix until just combined; avoid overmixing to keep the meatloaves tender.

Step 3: Form the Meatloaves

  1. Divide the mixture into 4 equal portions and shape each portion into a mini loaf. Place them on a lined baking sheet or in a greased loaf pan.

Step 4: Bake

  1. If using, spoon a little marinara sauce on top of each meatloaf for added flavor and moisture.
  2. Place the meatloaves in the preheated oven and bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaves are cooked through.

Step 5: Serve

  1. Once cooked, remove the meatloaves from the oven and let them rest for about 5 minutes before serving.
  2. Serve warm with your favorite sides, such as roasted vegetables or a fresh salad.
