Ingredients

• 1 cup strong brewed coffee, cooled to room temperature
• 1 tablespoon coffee liqueur (optional)
• 1 cup fresh raspberries (plus extra for garnish)
• 8 ounces mascarpone cheese
• 1 cup heavy cream
• 1/2 cup powdered sugar
• 1 teaspoon vanilla extract
• 24 ladyfinger cookies
• Cocoa powder (for dusting)


Instructions

Step 1: Prepare the Coffee Mixture
• Mix Coffee: In a shallow bowl, combine the brewed coffee and coffee liqueur (if using). Set aside to cool.

Step 2: Prepare the Raspberry Mixture
• Mash Raspberries: In a small bowl, gently mash half of the raspberries with a fork to release their juices. Leave the other half whole for layering.

Step 3: Make the Mascarpone Filling
• Whip Cream: In a large mixing bowl, whip the heavy cream until soft peaks form.
• Combine Ingredients: In another bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth. Gently fold the whipped cream into the mascarpone mixture until fully combined.

Step 4: Assemble the Tiramisu
• Dip Ladyfingers: Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
• Layer Ingredients: In a 9×9-inch dish or a similar-sized serving dish, arrange a layer of soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the mashed raspberries and half of the whole raspberries.
• Repeat Layers: Add another layer of soaked ladyfingers, followed by the remaining mascarpone mixture, and top with the remaining raspberries.

Step 5: Chill and Serve
• Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
• Dust with Cocoa: Before serving, dust the top with cocoa powder.
