- 1 lb cooked shrimp (peeled and deveined)
- 2 large cucumbers (diced)
- 1/2 cup cherry tomatoes (halved)
- 1/4 cup red onion (finely chopped)
- 1/4 cup fresh dill (chopped, or parsley)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper (to taste)
Instructions
Step 1: Prepare the Vegetables
- Wash and dice the cucumbers into bite-sized pieces.
- Cut the cherry tomatoes in half.
- Finely chop the red onion and fresh dill (or parsley).
Step 2: Combine Ingredients
- In a large bowl, combine the cooked shrimp, diced cucumbers, halved cherry tomatoes, chopped red onion, and fresh dill.
Step 3: Make the Dressing
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined.
Step 4: Toss and Serve
- Pour the dressing over the shrimp and vegetable mixture. Gently toss to coat all ingredients evenly.
- Serve immediately or chill in the refrigerator for about 30 minutes to enhance the flavors.
