Fresh Cucumber Shrimp Salad Recipe

Ingredients

  • 1 lb cooked shrimp (peeled and deveined)
  • 2 large cucumbers (diced)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh dill (chopped, or parsley)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper (to taste)

 


Instructions

Step 1: Prepare the Vegetables

  1. Wash and dice the cucumbers into bite-sized pieces.
  2. Cut the cherry tomatoes in half.
  3. Finely chop the red onion and fresh dill (or parsley).

Step 2: Combine Ingredients

  1. In a large bowl, combine the cooked shrimp, diced cucumbers, halved cherry tomatoes, chopped red onion, and fresh dill.

Step 3: Make the Dressing

  1. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined.

Step 4: Toss and Serve

  1. Pour the dressing over the shrimp and vegetable mixture. Gently toss to coat all ingredients evenly.
  2. Serve immediately or chill in the refrigerator for about 30 minutes to enhance the flavors.
