- 2 large flour tortillas (or whole wheat)
- 1 cup cooked chicken, shredded or sliced (grilled or rotisserie)
- 4 slices cooked bacon, crumbled
- 1/2 cup basil pesto (store-bought or homemade)
- 1 cup mixed greens (such as spinach, arugula, or lettuce)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup shredded mozzarella cheese (optional)
- Salt and pepper, to taste
- Lemon wedges (for serving, optional)
Instructions
Step 1: Prepare the Ingredients
- Cook the Bacon: If you haven’t already, cook the bacon until crispy. Drain on paper towels and crumble into pieces.
- Prepare Chicken: If using leftover chicken, shred or slice it into bite-sized pieces.
Step 2: Assemble the Wraps
- Spread Pesto: Lay the tortillas flat on a clean surface. Spread a generous amount of basil pesto over each tortilla.
- Layer Ingredients: On top of the pesto, layer the shredded chicken, crumbled bacon, mixed greens, halved cherry tomatoes, and mozzarella cheese (if using). Season with salt and pepper to taste.
Step 3: Wrap It Up
- Roll the Wraps: Starting from one end, tightly roll the tortilla around the fillings, tucking in the sides as you go to secure the ingredients.
- Slice: Cut each wrap in half diagonally for easy handling.
Step 4: Serve
- Enjoy: Serve the wraps immediately, optionally with lemon wedges on the side for a fresh squeeze of citrus.
