Ingredients
• 1.5 pounds beef roast (such as chuck roast or sirloin)
• 1 onion, thinly sliced
• 3 cloves garlic, minced
• 1 cup beef broth
• 1 cup water
• 1 tablespoon Worcestershire sauce
• 1 teaspoon dried thyme
• Salt and pepper, to taste
• 12 slider buns (or mini brioche buns)
• 6 slices provolone cheese (or Swiss cheese)
• Butter (for toasting buns)
Instructions
Step 1: Prepare the Beef
1. Season the Beef: Season the beef roast generously with salt and pepper on all sides.
2. Sear the Beef (optional): In a large skillet, heat a little oil over medium-high heat. Sear the beef roast for about 2-3 minutes on each side until browned. This step adds extra flavor but can be skipped if you’re short on time.
Step 2: Cook the Beef
Option 1: Slow Cooker
1. Combine Ingredients: Place the sliced onion and minced garlic in the bottom of the slow cooker. Add the seared beef roast on top.
2. Add Liquid: Pour in the beef broth, water, Worcestershire sauce, and thyme. Cover and cook on low for 6-8 hours or high for 4-5 hours until the beef is tender and easily shredded.
Option 2: Oven
1. Preheat Oven: Preheat your oven to 325°F (160°C).
2. Combine Ingredients: In a large roasting pan, place the sliced onion and minced garlic. Add the seared beef roast on top.
3. Add Liquid: Pour in the beef broth, water, Worcestershire sauce, and thyme. Cover tightly with foil and roast for 1.5-2 hours, or until the beef is tender.
Step 3: Shred the Beef
1. Remove and Shred: Once cooked, remove the beef from the slow cooker or oven and let it rest for a few minutes. Shred the beef using two forks.
Step 4: Assemble the Sliders
1. Prepare Buns: Preheat a skillet or griddle over medium heat. Butter the slider buns and toast them on the skillet until golden brown.
2. Layer Ingredients: On the bottom half of each slider bun, place a generous amount of shredded beef and top with a slice of provolone cheese. Place the top half of the bun on top.
Step 5: Serve
1. Prepare Au Jus: Strain the cooking liquid from the slow cooker or roasting pan into a bowl to use as au jus for dipping.
