For the Pancakes
- 1 1/2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons unsalted butter (melted)
- 1 teaspoon vanilla extract
For the Cinnamon Swirl
- 1/4 cup brown sugar
- 1 tablespoon ground cinnamon
- 2 tablespoons unsalted butter (softened)
For the Cream Cheese Glaze
- 4 oz cream cheese (softened)
- 1/2 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
Step 1: Prepare the Cinnamon Swirl
- In a small bowl, combine the brown sugar, ground cinnamon, and softened butter. Mix until well combined and set aside.
Step 2: Make the Pancake Batter
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined (a few lumps are okay).
Step 3: Cook the Pancakes
- Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
- Pour about 1/4 cup of pancake batter onto the skillet.
- Immediately drizzle some of the cinnamon swirl mixture over the pancake. Use a toothpick or knife to gently swirl it into the batter.
- Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook for another 1–2 minutes until golden brown. Repeat with the remaining batter.
Step 4: Prepare the Cream Cheese Glaze
- In a medium bowl, beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.
Step 5: Serve
- Stack the pancakes on a plate and drizzle with the cream cheese glaze.
