For the Dressing

 

  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

 


Instructions

Step 1: Prepare the Salad Ingredients

 

  1. Chop vegetables: In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, radishes, Kalamata olives, garbanzo beans, roasted red peppers, feta cheese, and fresh parsley.
