  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons instant espresso powder (or finely ground espresso)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped nuts (optional, such as walnuts or pecans)

 


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

Step 2: Prepare the Cookie Dough

  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and espresso powder.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  5. Gently fold in the chocolate chips and chopped nuts (if using).

Step 3: Bake the Cookies

  1. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10–12 minutes, or until the edges are lightly golden but the centers are still soft.

Step 4: Cool and Serve

  1. Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
  2. Serve the cookies warm or at room temperature and enjoy.
