- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 cup brown sugar (packed)
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda

- 2 tablespoons instant espresso powder (or finely ground espresso)
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped nuts (optional, such as walnuts or pecans)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Step 2: Prepare the Cookie Dough
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, and espresso powder.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
- Gently fold in the chocolate chips and chopped nuts (if using).
Step 3: Bake the Cookies
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10–12 minutes, or until the edges are lightly golden but the centers are still soft.
Step 4: Cool and Serve
- Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
- Serve the cookies warm or at room temperature and enjoy.
