For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Strawberry Glaze:

  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (adjust to taste)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup water

For Garnish (Optional):

  • Fresh strawberries
  • Whipped cream
  • Mint leaves

 


Instructions

Step 1: Prepare the Cake Batter

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

Step 2: Bake the Cake

Pour the batter into the prepared cake pan and smooth the top.

Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 3: Prepare the Strawberry Glaze

In a small saucepan, combine the sliced strawberries, granulated sugar, lemon juice, and water. Cook over medium heat until the strawberries start to break down, about 5 minutes.

In a small bowl, mix the cornstarch with a tablespoon of water to create a slurry. Stir this mixture into the saucepan and cook for an additional 2–3 minutes, until the glaze thickens.

Remove from heat and let the glaze cool slightly before using.

Step 4: Assemble the Cake

Once the cake is completely cool, pour the strawberry glaze over the top, allowing it to drip down the sides.

If desired, garnish with fresh strawberries and mint leaves for a beautiful presentation.

Step 5: Serve

Slice the cake and serve with whipped cream if desired. Enjoy the delightful flavors of strawberry glaze on a moist vanilla cake!
