- 2 cups cooked shredded chicken (rotisserie chicken works well)
- 1 cup sugar-free BBQ sauce (adjust to taste)
- 1 cup cauliflower rice (fresh or frozen)
- 1/2 cup bell peppers (sliced, any color)
- 1/2 cup red onion (sliced)
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions (chopped, optional)
- Salt and pepper (to taste)
- Olive oil (for sautéing)
Instructions
Step 1: Prepare the Cauliflower Rice
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the cauliflower rice and sauté for about 5 minutes until tender. Season with salt and pepper to taste.
Step 2: Sauté the Vegetables
- In the same skillet, add a bit more olive oil if needed, then add the sliced bell peppers and red onion. Sauté for about 3–4 minutes until they are softened.
Step 3: Combine Chicken and BBQ Sauce
- In a bowl, combine the shredded chicken with the sugar-free BBQ sauce. Mix well to coat the chicken evenly.
Step 4: Assemble the Bowls
- In serving bowls, start with a base of cauliflower rice. Top with the sautéed bell peppers and onions, followed by the BBQ chicken mixture.
- Sprinkle shredded cheddar cheese on top.
Step 5: Serve
- Garnish with chopped green onions if desired. Serve immediately and enjoy!
