Ingredients
• 4 large eggs
• 1 cup milk (dairy or non-dairy)
• 1 teaspoon vanilla extract
• 1 teaspoon ground cinnamon
• 1/4 teaspoon salt
• 4 slices of thick bread (such as brioche or challah)
• 2 cups cornflakes, crushed
• 1/4 cup all-purpose flour
• 1/4 cup powdered sugar (for dusting, optional)
• Maple syrup (for serving)
• Fresh berries (for garnish, optional)
Instructions
• Whisk Ingredients: In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and salt until well combined.
• Crush Cornflakes: Place the cornflakes in a zip-top bag and crush them lightly with a rolling pin or your hands until they are coarsely crushed. Transfer to a shallow dish.
• Add Flour: In the same dish, mix in the all-purpose flour with the crushed cornflakes to create the coating.
• Soak Bread: Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.
• Coat with Cornflakes: After soaking, press each slice into the cornflake mixture, ensuring both sides are well coated.
• Heat Pan: In a large skillet or griddle, heat a tablespoon of butter or oil over medium heat.
• Cook Slices: Add the coated French toast slices to the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy. You may need to cook in batches depending on the size of your skillet.
• Plate the French Toast: Once cooked, transfer the French toast to serving plates.
• Dust with Powdered Sugar: If desired, dust with powdered sugar for a sweet touch.
• Add Toppings: Serve with maple syrup and fresh berries for garnish.
