For the Banana Filling:

  • 4 ripe bananas (sliced)
  • 1/2 cup brown sugar (packed)
  • 1/4 cup unsalted butter (cubed)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract

 


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).

Step 2: Prepare the Banana Filling

  1. In a large skillet over medium heat, melt the butter. Add the brown sugar and stir until melted and bubbly.
  2. Stir in the sliced bananas, vanilla extract, and cinnamon. Cook for 2–3 minutes, allowing the bananas to caramelize slightly. Remove from heat.

Step 3: Prepare the Cobbler Topping

  1. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  2. Stir in the milk, melted butter, and vanilla extract until just combined. Do not overmix; the batter should be slightly lumpy.

Step 4: Assemble the Cobbler

  1. Pour the banana mixture into a greased 9×9-inch baking dish or a similar-sized oven-safe dish.
  2. Spoon the cobbler topping over the bananas, spreading it evenly.

Step 5: Bake

  1. Bake in the preheated oven for 30–35 minutes, or until the topping is golden brown and a toothpick inserted into the cobbler comes out clean.

Step 6: Cool and Serve

  1. Allow the cobbler to cool for about 10 minutes before serving. Serve warm, optionally topped with vanilla ice cream or whipped cream.
