For the Meatballs:
- 1 lb ground turkey
- 1/2 cup breadcrumbs (whole wheat or gluten-free)
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup apple cider
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon olive oil (for cooking)
For the Glaze (Optional):
- 1/4 cup apple cider
- 2 tablespoons balsamic vinegar
- 1 tablespoon maple syrup
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
Step 1: Preheat Oven
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Step 2: Make the Meatball Mixture
- In a large mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese (if using), apple cider, chopped onion, minced garlic, egg, thyme, rosemary, salt, pepper, cinnamon, and nutmeg.
- Using your hands or a spoon, mix until all ingredients are well combined. Be careful not to overmix.
Step 3: Form the Meatballs
- Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place them on the prepared baking sheet.
Step 4: Cook the Meatballs
- Drizzle the olive oil over the meatballs and bake in the preheated oven for 20-25 minutes, or until they are cooked through and reach an internal temperature of 165°F (75°C).
Step 5: Prepare the Glaze (Optional)
- While the meatballs are baking, whisk together the apple cider, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper in a small saucepan.
- Bring the mixture to a simmer over medium heat and cook for about 5-7 minutes, or until slightly thickened.
Step 6: Serve
- If using the glaze, drizzle it over the meatballs just before serving.
- Serve the turkey meatballs hot, either on their own, over pasta, or in a sandwich.
