Deliciously Healthy Apple Cider Turkey Meatballs Recipe

For the Meatballs:

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs (whole wheat or gluten-free)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup apple cider
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil (for cooking)

For the Glaze (Optional):

  • 1/4 cup apple cider
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

 


Instructions

Step 1: Preheat Oven

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2: Make the Meatball Mixture

  1. In a large mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese (if using), apple cider, chopped onion, minced garlic, egg, thyme, rosemary, salt, pepper, cinnamon, and nutmeg.
  2. Using your hands or a spoon, mix until all ingredients are well combined. Be careful not to overmix.

Step 3: Form the Meatballs

  1. Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place them on the prepared baking sheet.

Step 4: Cook the Meatballs

  1. Drizzle the olive oil over the meatballs and bake in the preheated oven for 20-25 minutes, or until they are cooked through and reach an internal temperature of 165°F (75°C).

Step 5: Prepare the Glaze (Optional)

  1. While the meatballs are baking, whisk together the apple cider, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper in a small saucepan.
  2. Bring the mixture to a simmer over medium heat and cook for about 5-7 minutes, or until slightly thickened.

Step 6: Serve

  1. If using the glaze, drizzle it over the meatballs just before serving.
  2. Serve the turkey meatballs hot, either on their own, over pasta, or in a sandwich.
