Crunchy Chicken Salad Cucumber Roll-Ups Recipe

  • 2 large cucumbers
  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup Greek yogurt (or mayonnaise)
  • 1/4 cup celery, finely chopped
  • 1/4 cup red bell pepper, finely chopped
  • 1/4 cup green onions, sliced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh dill or parsley, chopped (optional)

 


Instructions

 

Step 1: Prepare the Chicken Salad

 

 

  1. Mix Ingredients: In a large bowl, combine the cooked chicken, Greek yogurt (or mayonnaise), chopped celery, red bell pepper, green onions, Dijon mustard, garlic powder, salt, and pepper. Mix until well combined.

 

 

 

Step 2: Prepare the Cucumbers

 

 

  1. Slice Cucumbers: Wash the cucumbers and cut off the ends. Using a vegetable peeler or mandoline, slice the cucumbers lengthwise into thin strips (about 1/8 inch thick). If the cucumbers are too watery, you can lightly salt them and let them sit for a few minutes, then pat dry with paper towels.

 

 

 

Step 3: Assemble the Roll-Ups

 

 

  1. Spread Chicken Salad: Take a cucumber slice and place about 1–2 tablespoons of the chicken salad mixture at one end of the cucumber strip.
  2. Roll Up: Gently roll the cucumber slice away from you, enclosing the chicken salad inside. Repeat with the remaining cucumber slices and chicken salad mixture.

 

 

 

Step 4: Serve

 

 

  1. Garnish: Arrange the roll-ups on a serving platter and garnish with fresh dill or parsley if desired.
  2. Enjoy: Serve immediately or refrigerate for up to 1 hour before serving.
