- 2 large cucumbers (peeled and sliced thinly lengthwise)
- 2 cups cooked chicken (shredded or diced)
- 1/2 cup Greek yogurt (or mayonnaise)
- 1/4 cup celery (finely chopped)
- 1/4 cup red onion (finely chopped)
- 1/4 cup bell pepper (finely chopped, any color)
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper (to taste)
- Fresh dill (chopped, for garnish)
Instructions
Step 1: Prepare the Chicken Salad
- In a medium bowl, mix together the cooked chicken, Greek yogurt (or mayonnaise), celery, red onion, bell pepper, Dijon mustard, garlic powder, salt, and pepper until well combined.
Step 2: Prepare the Cucumber
- Using a vegetable peeler or mandoline, slice the cucumbers into thin strips lengthwise, about 1/8 inch thick.
Step 3: Assemble the Roll-Ups
- Lay a cucumber slice flat and place a spoonful of the chicken salad at one end.
- Carefully roll the cucumber slice around the chicken salad, starting from the end with the filling.
- If needed, secure the roll with a toothpick to hold it together.
Step 4: Serve
- Arrange the roll-ups on a serving platter and garnish with fresh dill.
- Serve immediately or refrigerate until ready to serve.
