Crunchy Chicken Salad Cucumber Roll-Ups Recipe

Ingredients

  • 2 large cucumbers (peeled and sliced thinly lengthwise)
  • 2 cups cooked chicken (shredded or diced)
  • 1/2 cup Greek yogurt (or mayonnaise)
  • 1/4 cup celery (finely chopped)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup bell pepper (finely chopped, any color)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper (to taste)
  • Fresh dill (chopped, for garnish)

 


Instructions

Step 1: Prepare the Chicken Salad

  1. In a medium bowl, mix together the cooked chicken, Greek yogurt (or mayonnaise), celery, red onion, bell pepper, Dijon mustard, garlic powder, salt, and pepper until well combined.

Step 2: Prepare the Cucumber

  1. Using a vegetable peeler or mandoline, slice the cucumbers into thin strips lengthwise, about 1/8 inch thick.

Step 3: Assemble the Roll-Ups

  1. Lay a cucumber slice flat and place a spoonful of the chicken salad at one end.
  2. Carefully roll the cucumber slice around the chicken salad, starting from the end with the filling.
  3. If needed, secure the roll with a toothpick to hold it together.

Step 4: Serve

  1. Arrange the roll-ups on a serving platter and garnish with fresh dill.
  2. Serve immediately or refrigerate until ready to serve.
