Creamy Tuscan Salmon Pasta Recipe

For the Pasta:

  • 8 oz (225g) pasta (fettuccine, penne, or your choice)
  • Salt (for pasta water)

For the Salmon:

  • 2 salmon fillets (about 6 oz each)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

For the Creamy Sauce:

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed for extra flavor)
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley, for garnish (optional)

 


Instructions

Step 1: Cook the Pasta

  1. Boil Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente.
  2. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2: Cook the Salmon

  1. Season Salmon: Season the salmon fillets with salt and pepper on both sides.
  2. Heat Oil: In a large skillet, heat the olive oil over medium-high heat.
  3. Cook Salmon: Add the salmon fillets, skin side down (if applicable), and cook for about 4–5 minutes on each side, or until cooked through and flaky.
  4. Remove from the skillet and set aside.

Step 3: Prepare the Creamy Sauce

  1. Melt Butter: In the same skillet, melt the butter over medium heat.
  2. Sauté Garlic: Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add Cream: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth.
  4. Add Sun-Dried Tomatoes and Spinach: Stir in the chopped sun-dried tomatoes, fresh spinach, and Italian seasoning. Cook until the spinach is wilted.
  5. Season with salt and pepper to taste.

Step 4: Combine Pasta and Salmon

  1. Add Pasta: Add the cooked pasta to the skillet, tossing to coat in the creamy sauce.
  2. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  3. Flake Salmon: Gently flake the cooked salmon into bite-sized pieces and add it back to the skillet.
  4. Toss gently to combine.

Step 5: Serve

  1. Plate and Garnish: Serve the creamy Tuscan salmon pasta warm, garnished with fresh basil or parsley if desired.
