For the Pasta:
- 8 oz (225g) pasta (fettuccine, penne, or your choice)
- Salt (for pasta water)
For the Salmon:
- 2 salmon fillets (about 6 oz each)
- Salt and pepper to taste
- 1 tablespoon olive oil
For the Creamy Sauce:
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped (oil-packed for extra flavor)
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley, for garnish (optional)
Instructions
Step 1: Cook the Pasta
- Boil Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente.
- Reserve 1/2 cup of pasta water, then drain and set aside.
Step 2: Cook the Salmon
- Season Salmon: Season the salmon fillets with salt and pepper on both sides.
- Heat Oil: In a large skillet, heat the olive oil over medium-high heat.
- Cook Salmon: Add the salmon fillets, skin side down (if applicable), and cook for about 4–5 minutes on each side, or until cooked through and flaky.
- Remove from the skillet and set aside.
Step 3: Prepare the Creamy Sauce
- Melt Butter: In the same skillet, melt the butter over medium heat.
- Sauté Garlic: Add the minced garlic and sauté for about 1 minute until fragrant.
- Add Cream: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth.
- Add Sun-Dried Tomatoes and Spinach: Stir in the chopped sun-dried tomatoes, fresh spinach, and Italian seasoning. Cook until the spinach is wilted.
- Season with salt and pepper to taste.
Step 4: Combine Pasta and Salmon
- Add Pasta: Add the cooked pasta to the skillet, tossing to coat in the creamy sauce.
- If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Flake Salmon: Gently flake the cooked salmon into bite-sized pieces and add it back to the skillet.
- Toss gently to combine.
Step 5: Serve
- Plate and Garnish: Serve the creamy Tuscan salmon pasta warm, garnished with fresh basil or parsley if desired.
