Creamy Sun-Dried Tomato Salmon Recipe

Ingredients

• 4 salmon fillets (about 6 oz each)
• 1 tablespoon olive oil
• 2 cloves garlic, minced
• 1/2 cup sun-dried tomatoes, chopped (packed in oil for extra flavor)
• 1 cup heavy cream (or half-and-half)
• 1 cup fresh spinach, chopped
• 1/2 cup grated Parmesan cheese
• 1 teaspoon Italian seasoning
• Salt and pepper to taste
• Fresh basil or parsley for garnish (optional)


Instructions

Step 1: Prepare the Salmon
• Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.

Step 2: Cook the Salmon
• In a large skillet, heat the olive oil over medium-high heat.
• Add the salmon fillets to the skillet, skin-side down (if the skin is on), and cook for about 4–5 minutes on each side, or until cooked to your liking. Remove the salmon from the skillet and set aside.

Step 3: Make the Creamy Sauce
• In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
• Stir in the chopped sun-dried tomatoes and cook for another minute.
• Pour in the heavy cream and bring to a gentle simmer. Stir in the Italian seasoning and season with salt and pepper to taste.
• Mix in the chopped spinach and grated Parmesan cheese, stirring until the spinach is wilted and the cheese is melted.

Step 4: Combine and Serve
• Gently return the cooked salmon fillets to the skillet, spooning the creamy sauce over them.
• Cook for an additional minute to heat through. Garnish with fresh basil or parsley if desired.

Step 5: Serve
• Serve the creamy sun-dried tomato salmon hot, along with your choice of sides, such as pasta, rice, or a fresh salad.
