For the Meatballs:

  • 1 pound ground turkey
  • 1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed and drained)
  • 1/2 cup breadcrumbs (plain or Italian seasoned)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

For the Creamy Sauce:

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half)
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

 


Instructions

Step 1: Prepare the Meatballs

  • Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Mix Ingredients: In a large bowl, combine the ground turkey, chopped spinach, breadcrumbs, grated Parmesan cheese, egg, minced garlic, oregano, salt, pepper, and red pepper flakes (if using). Mix until just combined; do not overmix.
  • Form Meatballs: Shape the mixture into meatballs, about 1–1.5 inches in diameter, and place them on the prepared baking sheet.

Step 2: Bake the Meatballs

  • Bake: Bake the meatballs in the preheated oven for 20–25 minutes, or until they are cooked through and golden brown.

Step 3: Make the Creamy Sauce

  • Sauté Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add Cream and Broth: Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  • Add Cheese and Seasoning: Stir in the grated Parmesan cheese and Italian seasoning. Season with salt and pepper to taste. Let the sauce simmer for a few minutes until it thickens slightly.

Step 4: Combine Meatballs and Sauce

  • Add Meatballs to Sauce: Once the meatballs are baked, add them to the creamy sauce in the skillet. Gently toss to coat the meatballs in the sauce.

Step 5: Serve

  • Garnish: Serve the creamy spinach turkey meatballs over pasta, rice, or on their own. Garnish with fresh parsley if desired.
