For the Creamy Sauce:
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream (or half-and-half)
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (optional)
Instructions
Step 1: Prepare the Meatballs
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix Ingredients: In a large bowl, combine the ground turkey, chopped spinach, breadcrumbs, grated Parmesan cheese, egg, minced garlic, oregano, salt, pepper, and red pepper flakes (if using). Mix until just combined; do not overmix.
- Form Meatballs: Shape the mixture into meatballs, about 1–1.5 inches in diameter, and place them on the prepared baking sheet.
Step 2: Bake the Meatballs
- Bake: Bake the meatballs in the preheated oven for 20–25 minutes, or until they are cooked through and golden brown.
Step 3: Make the Creamy Sauce
- Sauté Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add Cream and Broth: Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
- Add Cheese and Seasoning: Stir in the grated Parmesan cheese and Italian seasoning. Season with salt and pepper to taste. Let the sauce simmer for a few minutes until it thickens slightly.
Step 4: Combine Meatballs and Sauce
- Add Meatballs to Sauce: Once the meatballs are baked, add them to the creamy sauce in the skillet. Gently toss to coat the meatballs in the sauce.
Step 5: Serve
- Garnish: Serve the creamy spinach turkey meatballs over pasta, rice, or on their own. Garnish with fresh parsley if desired.
