Ingredients
For the Cheesy Scalloped Potatoes:
• 4 medium russet potatoes, thinly sliced
• 1 cup heavy cream
• 1 cup milk
• 2 cups shredded cheddar cheese
• 1/2 teaspoon garlic powder
• 1/2 teaspoon onion powder
• Salt and pepper, to taste
• 1 tablespoon butter (for greasing the baking dish)
For the Creamy Pork Chops:
• 4 bone-in or boneless pork chops
• Salt and pepper, to taste
• 2 tablespoons olive oil
• 1 cup heavy cream
• 1 teaspoon Dijon mustard
• 1 teaspoon dried thyme
• 1/2 teaspoon garlic powder
• 1/2 cup chicken broth
• Fresh parsley (for garnish, optional)
Instructions
Step 1: Prepare the Cheesy Scalloped Potatoes
1. Preheat Oven: Preheat your oven to 375°F (190°C).
2. Grease Baking Dish: Grease a 9×13-inch baking dish with butter.
3. Layer Potatoes: Arrange half of the sliced potatoes in the bottom of the prepared baking dish. Season with salt, pepper, garlic powder, and onion powder.
4. Add Cream and Cheese: In a bowl, mix together the heavy cream and milk. Pour half of the cream mixture over the potatoes. Sprinkle with 1 cup of shredded cheddar cheese. Repeat with the remaining potatoes, cream mixture, and top with the remaining cheese.
5. Bake: Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
Step 2: Cook the Pork Chops
1. Season Pork Chops: Season the pork chops with salt and pepper on both sides.
2. Sear Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the pork chops from the skillet and set aside.
3. Make the Creamy Sauce: In the same skillet, reduce the heat to medium. Add the chicken broth, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream, Dijon mustard, thyme, garlic powder, and season with salt and pepper to taste. Let the sauce simmer for about 3-4 minutes until slightly thickened.
4. Return Pork Chops: Return the pork chops to the skillet, spooning the creamy sauce over them. Cook for an additional 2 minutes to heat through.
Step 3: Serve
1. Plate the Dish: Serve the cheesy scalloped potatoes on a plate, topped with a creamy pork chop and drizzled with the sauce.
2. Garnish: Garnish with fresh parsley if desired.
3. Enjoy: Enjoy your delicious Creamy Pork Chops over Cheesy Scalloped Potatoes!
