Ingredients

• 12 ounces cheese tortellini (fresh or frozen)
• 2 tablespoons olive oil
• 8 ounces mushrooms, sliced (such as cremini or button mushrooms)
• 3 cloves garlic, minced
• 1 cup heavy cream
• 1 cup grated Parmesan cheese
• Salt and pepper, to taste
• 1/2 teaspoon garlic powder (optional)
• 1/4 teaspoon nutmeg (optional)
• Fresh parsley, chopped (for garnish)


Instructions

Step 1: Cook the Tortellini
• Boil Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Drain and set aside.

Step 2: Sauté the Mushrooms
• Heat Oil: In a large skillet over medium heat, add the olive oil.
• Cook Mushrooms: Add the sliced mushrooms and sauté for about 5–7 minutes, or until they are golden brown and tender. Add the minced garlic and sauté for an additional 1–2 minutes until fragrant.

Step 3: Make the Alfredo Sauce
• Add Cream: Pour in the heavy cream and bring to a gentle simmer. Stir to combine.
• Add Cheese: Gradually whisk in the grated Parmesan cheese until melted and smooth. If using, add garlic powder and nutmeg. Season with salt and pepper to taste.

Step 4: Combine Tortellini and Sauce
• Add Tortellini: Add the cooked tortellini to the skillet and gently toss to coat in the creamy sauce. Cook for an additional 2–3 minutes until heated through.
