Ingredients
• 1 baguette (or Italian bread), sliced into 1/2-inch thick slices
• 8 ounces Boursin cheese (or any garlic and herb cheese spread)
• 1 cup cherry tomatoes, diced
• 1/4 cup fresh basil, chopped
• 1 tablespoon balsamic vinegar
• 1 tablespoon olive oil
• Salt and pepper, to taste
• 1 clove garlic, halved (optional, for rubbing on bread)
• Olive oil (for drizzling)
Instructions
Step 1: Prepare the Topping
1. Combine Ingredients: In a medium bowl, mix together the diced cherry tomatoes, chopped basil, balsamic vinegar, olive oil, salt, and pepper. Set aside to allow the flavors to meld.
Step 2: Toast the Bread
1. Preheat Oven: Preheat your oven to 400°F (200°C).
2. Arrange Bread Slices: Place the sliced baguette on a baking sheet in a single layer.
3. Drizzle with Olive Oil: Lightly brush or drizzle olive oil over the top of each slice.
4. Toast: Bake in the preheated oven for about 5-7 minutes, or until the bread is golden and crispy. Optionally, you can rub the toasted bread with the halved garlic clove for extra flavor.
Step 3: Assemble the Bruschetta
1. Spread Boursin: Remove the toasted bread from the oven and let it cool slightly. Spread a generous layer of Boursin cheese on each slice.
2. Top with Tomato Mixture: Spoon the tomato and basil mixture on top of the cheese.
Step 4: Serve
1. Garnish and Enjoy: Drizzle with a little more olive oil if desired, and serve immediately. Enjoy your Creamy Boursin Bruschetta!
