For the Streusel Topping:

  • 1/4 cup brown sugar, packed
  • 1/4 cup unsalted butter, softened
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chopped nuts (optional, such as pecans or walnuts)

 


Instructions

Step 1: Preheat the Oven

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.

Step 2: Make the Muffin Batter

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Combine Wet Ingredients: In another bowl, combine the melted butter, buttermilk, eggs, and orange zest. Whisk until well blended.
  3. Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix; a few lumps are okay.
  4. Fold in Cranberries: Gently fold in the cranberries.

Step 3: Prepare the Streusel Topping

  1. Mix Streusel Ingredients: In a small bowl, combine the flour, brown sugar, softened butter, ground cinnamon, and chopped nuts (if using). Use a fork or your fingers to mix until crumbly.

Step 4: Assemble Muffins

  1. Fill Muffin Cups: Divide the muffin batter evenly among the prepared muffin cups, filling each about 2/3 full.
  2. Add Streusel Topping: Sprinkle the streusel topping generously over each muffin.

Step 5: Bake

  1. Bake Muffins: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
