Cranberry Brie Tart with Pancetta & Thyme Recipe

Ingredients

• 1 sheet puff pastry, thawed
• 8 ounces brie cheese, sliced
• 1 cup fresh or frozen cranberries
• 4 ounces pancetta, diced
• 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
• 1/4 cup sugar
• 1 tablespoon balsamic vinegar
• 1 egg, beaten (for egg wash)
• Salt and pepper, to taste
• Fresh thyme sprigs (for garnish, optional)


Instructions

Step 1: Prepare the Puff Pastry
• Preheat your oven to 400°F (200°C).
• On a lightly floured surface, roll out the puff pastry to fit a tart pan (or a baking sheet if you prefer a free-form tart). Trim the edges if necessary and place it in the tart pan. Prick the bottom with a fork to prevent bubbling.

Step 2: Cook the Pancetta
• In a skillet over medium heat, cook the diced pancetta until crispy, about 5–7 minutes. Remove from heat and drain on paper towels.

Step 3: Prepare the Cranberry Filling
• In a medium saucepan, combine the cranberries, sugar, balsamic vinegar, and thyme. Cook over medium heat until the cranberries begin to burst and the mixture thickens slightly, about 5–7 minutes. Season with salt and pepper to taste.

Step 4: Assemble the Tart
• Arrange the sliced brie cheese evenly over the puff pastry. Spoon the cranberry mixture over the brie, followed by the crispy pancetta.
• Brush the edges of the puff pastry with the beaten egg to give it a golden color when baked.

Step 5: Bake the Tart
• Place the tart in the preheated oven and bake for about 25–30 minutes, or until the pastry is golden brown and puffed.

Step 6: Serve
• Remove the tart from the oven and let it cool slightly. Garnish with fresh thyme sprigs if desired.
