Classic Homestyle Meatloaf Recipe

For the Meatloaf:

  • 2 pounds ground beef (80/20 blend)
  • 1 cup breadcrumbs (plain or Italian)
  • 1/2 cup onion (finely chopped)
  • 1/2 cup bell pepper (finely chopped)
  • 2 cloves garlic (minced)
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard (optional)

 


Instructions

 Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C).

Step 2: Prepare the Meatloaf Mixture

In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, bell pepper, minced garlic, eggs, milk, Worcestershire sauce, thyme, oregano, salt, and pepper.

Use your hands or a spoon to mix until just combined. Be careful not to overmix, as this can make the meatloaf tough.

Step 3: Shape the Meatloaf

Shape the mixture into a loaf and place it in a lightly greased baking dish or on a lined baking sheet.

Step 4: Prepare the Glaze

In a small bowl, combine the ketchup, brown sugar, apple cider vinegar, and mustard (if using). Mix until smooth.

Brush half of the glaze over the top of the meatloaf.

Step 5: Bake the Meatloaf

Place the meatloaf in the preheated oven and bake for 45 minutes.

After 45 minutes, remove the meatloaf from the oven, brush with the remaining glaze, and return it to the oven for an additional 15 minutes, or until the internal temperature reaches 160°F (70°C).

Step 6: Serve

Let the meatloaf rest for about 10 minutes before slicing. Serve warm with your favorite sides!
