- 1 cup almond flour (or whole wheat flour)
- 1/2 cup rolled oats
- 1/2 cup protein powder (vanilla or chocolate flavor)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup coconut oil (melted) or unsalted butter
- 1/4 cup honey (or maple syrup)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Step 2: Mix Dry Ingredients
- In a large bowl, whisk together the almond flour, rolled oats, protein powder, baking soda, and salt until well combined.
Step 3: Mix Wet Ingredients
- In another bowl, mix the melted coconut oil (or butter), honey (or maple syrup), egg, and vanilla extract until smooth.
Step 4: Combine Mixtures
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the dark chocolate chips.
Step 5: Shape the Cookies
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie to allow for spreading.
Step 6: Bake
- Bake in the preheated oven for 10–12 minutes, or until the edges are lightly golden. The cookies will firm up as they cool.
Step 7: Cool and Serve
- Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.
