For the Pie Crust:

Instructions
Step 1: Prepare the Pie Crust
- In a medium bowl, mix together the graham cracker crumbs, melted butter, and granulated sugar until well combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust.
- Place the crust in the refrigerator while you prepare the filling.
Step 2: Make the Chocolate Layer
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Remove from heat and pour the hot cream over the chocolate chips in a bowl. Let it sit for a minute, then stir until smooth and glossy.
- Pour the melted chocolate into the chilled pie crust, spreading it evenly. Return the pie to the refrigerator to set while you make the caramel cream filling.
Step 3: Prepare the Caramel Cream Filling
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Then, fold in the caramel sauce until combined.
Step 4: Assemble the Pie
- Pour the caramel cream filling over the chocolate layer in the pie crust, spreading it evenly.
- Cover the pie with plastic wrap and refrigerate for at least 4 hours, or until set.
Step 5: Serve
- Before serving, top the pie with whipped cream, chocolate shavings or cocoa powder, and drizzle with additional caramel sauce.
- Slice the pie into wedges and serve chilled.
