- 1 can chickpeas, drained and rinsed
- 1 ripe avocado, diced
- 1/2 cup feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- Fresh parsley or basil, chopped (optional)
Instructions
- In a large bowl, combine the chickpeas, diced avocado, crumbled feta cheese, cherry tomatoes, cucumber, and red onion.
- Drizzle the olive oil and lemon juice over the salad. Season with salt and pepper to taste, and gently toss to combine all the ingredients.
- If desired, garnish with fresh parsley or basil.
- Serve the salad immediately, or refrigerate for up to 30 minutes to allow the flavors to meld.
