Chickpea Feta Avocado Salad Recipe

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 ripe avocado, diced
  • 1/2 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Fresh parsley or basil, chopped (optional)


Instructions

  • In a large bowl, combine the chickpeas, diced avocado, crumbled feta cheese, cherry tomatoes, cucumber, and red onion.
  • Drizzle the olive oil and lemon juice over the salad. Season with salt and pepper to taste, and gently toss to combine all the ingredients.
  • If desired, garnish with fresh parsley or basil.
  • Serve the salad immediately, or refrigerate for up to 30 minutes to allow the flavors to meld.
