Ingredients

• 1 pound boneless, skinless chicken breasts (sliced into strips)
• 2 cups fresh spinach (washed and chopped)
• 1 cup mushrooms (sliced, any variety)
• 3 cloves garlic (minced)
• 1 teaspoon dried Italian herbs (or a mix of oregano and basil)
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 2 tablespoons olive oil
• 1/4 cup chicken broth (or white wine)
• 1/4 cup heavy cream (optional for creaminess)
• 1/2 cup grated Parmesan cheese (optional for topping)


Instructions

Step 1: Prepare the Ingredients
1. Slice Chicken: Slice the chicken breasts into strips and season with salt, pepper, and dried Italian herbs.

Step 2: Cook the Chicken
1. Heat Oil: In a large skillet, heat the olive oil over medium-high heat.
2. Sear Chicken: Add the chicken strips to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 3: Sauté Vegetables
1. Sauté Garlic and Mushrooms: In the same skillet, add the sliced mushrooms and minced garlic. Sauté for about 3-4 minutes until the mushrooms are tender and the garlic is fragrant.
2. Add Spinach: Add the chopped spinach to the skillet and cook for another 2-3 minutes until wilted.

Step 4: Combine and Finish
1. Return Chicken to Skillet: Return the cooked chicken to the skillet with the vegetables.
2. Add Broth and Cream: Pour in the chicken broth and heavy cream (if using). Stir to combine and let it simmer for about 2-3 minutes until heated through.
3. Add Cheese: If desired, sprinkle the grated Parmesan cheese over the top and stir until melted and well combined.
