Ingredients
• 4 medium potatoes, diced (about 1.5 lbs)
• 1 lb (450g) ground beef or turkey
• 1 tablespoon olive oil
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 packet taco seasoning (about 1 oz)
• 1 cup shredded cheddar cheese
• 1 cup diced tomatoes (canned or fresh)
• 1/2 cup corn (canned or frozen)
• Salt and pepper to taste
• Fresh cilantro for garnish (optional)
• Sour cream or Greek yogurt for serving (optional)
Instructions
Step 1: Cook the Potatoes
1. Boil Potatoes: In a large pot, bring water to a boil. Add the diced potatoes and cook for about 8-10 minutes until just tender but not mushy. Drain and set aside.
2. Sauté Potatoes: In a large skillet, heat the olive oil over medium heat. Add the drained potatoes and cook until they are golden and crispy, about 5-7 minutes. Season with salt and pepper. Remove from the skillet and set aside.
Step 2: Cook the Meat
1. Brown the Meat: In the same skillet, add the diced onion and cook for about 3-4 minutes until softened. Add the minced garlic and cook for an additional minute.
2. Add Ground Meat: Add the ground beef or turkey to the skillet. Cook until browned and cooked through, breaking it up with a spoon as it cooks.
Step 3: Add Seasoning and Other Ingredients
1. Season: Sprinkle the taco seasoning over the cooked meat and stir to combine. Add the diced tomatoes and corn, mixing well.
2. Combine with Potatoes: Return the crispy potatoes to the skillet and gently stir to combine all ingredients.
Step 4: Add Cheese
1. Melt the Cheese: Sprinkle the shredded cheddar cheese over the top of the mixture. Cover the skillet with a lid and let it cook for about 3-5 minutes, or until the cheese is melted and bubbly.
Step 5: Serve
1. Garnish: Remove from heat and garnish with fresh cilantro if desired. Serve hot with sour cream or Greek yogurt on the side.
