Ingredients

• 2 cups rotini pasta
• 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
• 2 tablespoons Cajun seasoning (adjust to taste)
• 2 tablespoons olive oil
• 4 cloves garlic, minced
• 1 cup chicken broth
• 1 cup heavy cream
• 1 1/2 cups shredded cheddar cheese (or a cheese blend)
• 1/2 cup grated Parmesan cheese
• Salt and pepper, to taste
• Chopped parsley (optional)


Instructions

Step 1: Cook the Pasta
1. Boil Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and set aside.

Step 2: Cook the Chicken
1. Season Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with Cajun seasoning, salt, and pepper.
2. Sauté Chicken: Add the seasoned chicken to the skillet and cook for about 5–7 minutes, or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.

Step 3: Make the Sauce
1. Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
2. Add Broth and Cream: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer.
3. Add Cheese: Gradually stir in the shredded cheddar cheese and grated Parmesan cheese until melted and smooth.

Step 4: Combine and Serve
1. Add Chicken and Pasta: Return the cooked chicken to the skillet and add the drained rotini pasta. Toss everything together until the pasta is well coated in the cheesy sauce.
2. Adjust Seasoning: Taste and adjust seasoning with additional salt, pepper, or Cajun seasoning if needed.
3. Garnish and Serve: Garnish with chopped parsley if desired and serve hot.
