- 1 pound cheese tortellini (fresh or frozen)
- 1 pound sirloin steak (thinly sliced)
- 1 tablespoon olive oil
- 1 small onion (sliced)
- 1 bell pepper (sliced; any color)
- 2 cloves garlic (minced)
- 1 cup beef broth
- 1 cup heavy cream
- 1 1/2 cups provolone cheese (shredded)
- 1 teaspoon Worcestershire sauce
- Salt and pepper (to taste)
- Fresh parsley (chopped, for garnish)
Instructions
Step 1: Cook the Tortellini
- In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
Step 2: Sauté the Steak and Vegetables
- In a large skillet over medium-high heat, add the olive oil.
- Add the thinly sliced sirloin steak to the skillet. Season with salt and pepper, and cook for about 3–4 minutes until browned. Remove the steak from the skillet and set aside.
- In the same skillet, add the sliced onion and bell pepper. Sauté for about 5 minutes until they are softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.
Step 3: Make the Creamy Provolone Sauce
- Pour the beef broth into the skillet and bring to a simmer. Stir in the heavy cream and Worcestershire sauce.
- Gradually add the shredded provolone cheese, stirring continuously until melted and the sauce is smooth. Season with additional salt and pepper to taste.
Step 4: Combine and Serve
- Add the cooked tortellini and sautéed steak back into the skillet. Gently toss to coat everything in the creamy sauce.
- Remove from heat and garnish with chopped fresh parsley before serving.
- Serve warm and enjoy this comforting and flavorful dish!
