Ingredients
For the Meatloaf:
- 1 1/2 pounds ground beef (80/20 blend)
- 1 cup breadcrumbs (plain or seasoned)
- 1/2 cup onion (finely chopped)
- 1/2 cup bell pepper (finely chopped)
- 2 cloves garlic (minced)
- 1 large egg
- 1/2 cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (for stuffing)
For the BBQ Glaze:
- 1/2 cup barbecue sauce (your choice)
- 2 tablespoons ketchup
- 1 tablespoon brown sugar
- 1 tablespoon apple cider vinegar
Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Step 2: Prepare the Meatloaf Mixture
In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, bell pepper, minced garlic, egg, milk, Worcestershire sauce, smoked paprika, thyme, salt, and pepper. Mix until just combined; avoid overmixing to keep the meatloaf tender.
Step 3: Shape the Meatloaf
On a sheet of parchment paper or a clean surface, shape half of the meat mixture into a rectangle about 1/2 inch thick.
Place the shredded cheddar cheese in the center of the meat rectangle.
Carefully fold the other half of the meat mixture over the cheese, sealing the edges to enclose the cheese completely. Shape it into a loaf.
Step 4: Prepare the BBQ Glaze
In a small bowl, combine the barbecue sauce, ketchup, brown sugar, and apple cider vinegar. Mix until smooth.
Step 5: Bake the Meatloaf
Place the meatloaf in a lightly greased baking dish or on a lined baking sheet.
Brush half of the BBQ glaze over the top of the meatloaf.
Bake in the preheated oven for 45 minutes. After 45 minutes, brush the remaining glaze over the meatloaf and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (70°C).
Step 6: Serve
Let the meatloaf rest for about 10 minutes before slicing. Serve warm with your favorite sides!
