- 2 cups milk (dairy or non-dairy)
- 1/4 cup maple syrup (or honey)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups grated carrots (about 3 medium carrots)
- 1/2 cup raisins (or chopped walnuts, optional)
- 1/4 cup shredded coconut (optional)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or a similar-sized casserole dish.
Step 2: Mix Dry Ingredients
- In a large bowl, mix together the rolled oats, baking powder, cinnamon, nutmeg, and salt until well combined.
Step 3: Mix Wet Ingredients
- In another bowl, whisk together the milk, maple syrup, eggs, and vanilla extract.
Step 4: Combine Mixtures
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the grated carrots, raisins, and shredded coconut (if using).
Step 5: Bake
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake in the preheated oven for 30–35 minutes, or until the top is set and lightly golden.
Step 6: Serve
- Allow the baked oatmeal to cool for a few minutes before slicing into squares.
- Serve warm, topped with additional maple syrup or yogurt if desired.
