Carrot Cake Baked Oatmeal Recipe

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 cups milk (dairy or non-dairy)
  • 1/4 cup maple syrup (or honey)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrots (about 3 medium carrots)
  • 1/2 cup raisins (or chopped walnuts, optional)
  • 1/4 cup shredded coconut (optional)

 


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or a similar-sized casserole dish.

Step 2: Mix Dry Ingredients

  1. In a large bowl, mix together the rolled oats, baking powder, cinnamon, nutmeg, and salt until well combined.

Step 3: Mix Wet Ingredients

  1. In another bowl, whisk together the milk, maple syrup, eggs, and vanilla extract.

Step 4: Combine Mixtures

  1. Pour the wet ingredients into the dry ingredients and stir until just combined.
  2. Gently fold in the grated carrots, raisins, and shredded coconut (if using).

Step 5: Bake

  1. Pour the mixture into the prepared baking dish, spreading it evenly.
  2. Bake in the preheated oven for 30–35 minutes, or until the top is set and lightly golden.

Step 6: Serve

  1. Allow the baked oatmeal to cool for a few minutes before slicing into squares.
  2. Serve warm, topped with additional maple syrup or yogurt if desired.
