California Roll Sushi Bowls Recipe

For the Sushi Rice

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

For the Bowls

  • 1 cup imitation crab meat, shredded or chopped
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 1 carrot, grated or julienned
  • 1/4 cup green onions, chopped
  • 1/4 cup sesame seeds (optional)
  • Soy sauce or tamari, for serving
  • Pickled ginger, for serving (optional)
  • Wasabi, for serving (optional)

 


Instructions

Step 1: Cook the Sushi Rice

  1. Rinse the sushi rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed.
  3. Remove from heat and let it sit covered for 10 minutes.

Step 2: Season the Rice

  1. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved.
  2. Fluff the cooked rice with a fork and gently fold in the vinegar mixture.
  3. Allow the rice to cool slightly.

Step 3: Assemble the Bowls

  1. Divide the seasoned sushi rice among serving bowls.
  2. Top each bowl with shredded imitation crab, sliced avocado, cucumber, grated carrot, and chopped green onions.
  3. Sprinkle sesame seeds over the top if using.

Step 4: Serve

  1. Serve with soy sauce or tamari on the side, along with pickled ginger and wasabi if desired.
  2. Mix the ingredients together in the bowl and enjoy!
