For the Sushi Rice
- 1 cup sushi rice
- 1 1/4 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
For the Bowls
- 1 cup imitation crab meat, shredded or chopped
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 1 carrot, grated or julienned
- 1/4 cup green onions, chopped
- 1/4 cup sesame seeds (optional)
- Soy sauce or tamari, for serving
- Pickled ginger, for serving (optional)
- Wasabi, for serving (optional)
Instructions
Step 1: Cook the Sushi Rice
- Rinse the sushi rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed.
- Remove from heat and let it sit covered for 10 minutes.
Step 2: Season the Rice
- In a small bowl, mix the rice vinegar, sugar, and salt until dissolved.
- Fluff the cooked rice with a fork and gently fold in the vinegar mixture.
- Allow the rice to cool slightly.
Step 3: Assemble the Bowls
- Divide the seasoned sushi rice among serving bowls.
- Top each bowl with shredded imitation crab, sliced avocado, cucumber, grated carrot, and chopped green onions.
- Sprinkle sesame seeds over the top if using.
Step 4: Serve
- Serve with soy sauce or tamari on the side, along with pickled ginger and wasabi if desired.
- Mix the ingredients together in the bowl and enjoy!
