- 4 slices of bread (sourdough, ciabatta, or whole grain)
- 1 cup fresh mozzarella cheese (sliced or shredded)
- 1 medium tomato (diced)
- 1/4 cup fresh basil leaves (chopped)
- 1 clove garlic (minced)
- 2 tablespoons balsamic vinegar
- Salt and pepper (to taste)
- 4 tablespoons butter (softened)
- Olive oil (optional, for drizzling)
Instructions
Step 1: Prepare the Bruschetta Topping
- Mix Ingredients: In a bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, salt, and pepper. Stir well and set aside to let the flavors meld.
Step 2: Assemble the Sandwiches
- Butter the Bread: Spread softened butter on one side of each slice of bread.
- Layer Ingredients: On the unbuttered side of two slices, layer the fresh mozzarella cheese, then spoon the bruschetta mixture on top. Place the remaining bread slices on top, buttered side facing up.
Step 3: Cook the Sandwiches
- Heat the Pan: Place the sandwiches in a skillet over medium heat, buttered side down. Cook for 3–4 minutes until golden brown.
- Flip and Cook: Carefully flip the sandwiches and cook for another 3–4 minutes, pressing gently, until the cheese is melted and both sides are golden brown.
Step 4: Serve
- Slice and Enjoy: Remove the sandwiches from the skillet, let rest for a minute, then slice in half and serve warm. Drizzle with olive oil if desired.
