Brazilian Lemonade with Coconut Recipe

Ingredients

• 4 medium lemons
• 1 cup sweetened shredded coconut
• 4 cups cold water
• 1/2 cup sugar (adjust to taste)
• Ice cubes
• Fresh mint leaves (for garnish, optional)


Instructions

Step 1: Prepare the Lemons
1. Wash and Cut: Wash the lemons thoroughly and cut them into quarters. Remove any seeds you can see.

Step 2: Blend the Ingredients
1. Combine in Blender: In a blender, combine the quartered lemons, shredded coconut, and 2 cups of cold water.
2. Blend: Blend on high speed for about 30 seconds until the mixture is well combined.

Step 3: Strain the Mixture
1. Strain: Pour the blended mixture through a fine mesh strainer or cheesecloth into a large pitcher to remove the pulp and coconut solids. Use a spatula to press down and extract as much liquid as possible.
2. Add Remaining Water: Add the remaining 2 cups of cold water to the pitcher.

Step 4: Sweeten and Serve
1. Sweeten: Stir in the sugar, adjusting to your taste preference. Mix well until the sugar is fully dissolved.
2. Chill: Refrigerate for at least 30 minutes to chill, or serve immediately over ice.

Step 5: Garnish and Enjoy
1. Serve: Pour the Brazilian lemonade into glasses filled with ice.
2. Garnish: Optionally, garnish with fresh mint leaves for an added touch of freshness.
