- 2 ribeye or filet mignon steaks (about 1 inch thick)
- Salt and pepper (to taste)
- 1 tablespoon olive oil
- 1/2 cup blue cheese (crumbled)
- 1/4 cup breadcrumbs (preferably panko for extra crunch)
- 2 tablespoons fresh parsley (chopped, for garnish)
- 1 tablespoon Dijon mustard (optional, for extra flavor)
- 1 tablespoon butter (for finishing)
Instructions
Step 1: Prepare the Steaks
- Pat the steaks dry with paper towels. Season both sides generously with salt and pepper.
- Preheat your oven to 400°F (200°C).
Step 2: Sear the Steaks
- In an oven-safe skillet, heat the olive oil over medium-high heat.
- Once the oil is hot, add the steaks to the skillet. Sear for about 3–4 minutes on each side until a nice crust forms. If using Dijon mustard, brush it on the top of the steaks during the last minute of searing.
Step 3: Prepare the Blue Cheese Topping
- In a small bowl, combine the crumbled blue cheese and breadcrumbs. Mix until well combined.
- After searing, remove the skillet from the heat. Spoon the blue cheese mixture generously over the top of each steak.
Step 4: Bake
- Place the skillet in the preheated oven and bake for 5–7 minutes for medium-rare, or longer if you prefer your steak cooked more.
- During the last minute of baking, add a tablespoon of butter to the skillet for added richness.
Step 5: Serve
- Remove the skillet from the oven and let the steaks rest for about 5 minutes.
- Sprinkle with fresh parsley before serving.
- Serve the blue cheese crusted steaks with your favorite sides.
