Blue Cheese Crusted Steak Recipe

  • 2 ribeye or filet mignon steaks (about 1 inch thick)
  • Salt and pepper (to taste)
  • 1 tablespoon olive oil
  • 1/2 cup blue cheese (crumbled)
  • 1/4 cup breadcrumbs (preferably panko for extra crunch)
  • 2 tablespoons fresh parsley (chopped, for garnish)
  • 1 tablespoon Dijon mustard (optional, for extra flavor)
  • 1 tablespoon butter (for finishing)

 


Instructions

Step 1: Prepare the Steaks

  1. Pat the steaks dry with paper towels. Season both sides generously with salt and pepper.
  2. Preheat your oven to 400°F (200°C).

Step 2: Sear the Steaks

  1. In an oven-safe skillet, heat the olive oil over medium-high heat.
  2. Once the oil is hot, add the steaks to the skillet. Sear for about 3–4 minutes on each side until a nice crust forms. If using Dijon mustard, brush it on the top of the steaks during the last minute of searing.

Step 3: Prepare the Blue Cheese Topping

  1. In a small bowl, combine the crumbled blue cheese and breadcrumbs. Mix until well combined.
  2. After searing, remove the skillet from the heat. Spoon the blue cheese mixture generously over the top of each steak.

Step 4: Bake

  1. Place the skillet in the preheated oven and bake for 5–7 minutes for medium-rare, or longer if you prefer your steak cooked more.
  2. During the last minute of baking, add a tablespoon of butter to the skillet for added richness.

Step 5: Serve

  1. Remove the skillet from the oven and let the steaks rest for about 5 minutes.
  2. Sprinkle with fresh parsley before serving.
  3. Serve the blue cheese crusted steaks with your favorite sides.
