- 1 lb large shrimp (peeled and deveined)
- 1 bunch asparagus (trimmed and cut into 2-inch pieces)
- 2 tablespoons olive oil (divided)
- 1 tablespoon blackening seasoning
- 2 cloves garlic (minced)
- 1 lemon (zested and juiced)
- Salt and pepper (to taste)
- Fresh parsley (chopped, for garnish)
Instructions
Step 1: Prepare the Shrimp
- In a bowl, toss the shrimp with 1 tablespoon of olive oil and the blackening seasoning until evenly coated.
Step 2: Cook the Shrimp
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the seasoned shrimp to the skillet in a single layer and cook for about 2–3 minutes on each side, or until pink and opaque.
- Remove the shrimp from the skillet and set aside.
Step 3: Cook the Asparagus
- In the same skillet, add the asparagus and cook for about 4–5 minutes, stirring occasionally, until tender but still crisp.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
Step 4: Combine and Serve
- Return the cooked shrimp to the skillet with the asparagus. Add the lemon zest and juice, then season with salt and pepper to taste. Stir to combine and heat through for about 1–2 minutes.
- Remove from heat, garnish with chopped parsley, and serve immediately.
